No prolonged "boiling." Semi-boil with little light. Quick. Any noodle can be added (including pasta), however I prefer the broad Japanese varieties. To me, it's more like a stew. Since I first saw bonito flakes on culinary shows and food documentaries, I had been wanting to try them. I was astonished beyond belief by how good these taste. I haven't been able to consume smoked fish in many years because I believe the softer varieties retain too much salt and other curing ingredients, and I would suffer terrible bodily side effects. When I first tried one of these bonito flakes, I was reminded of smoked salmon. I produced a cream cheese and bonito flakes mixture; it tastes a lot like cream cheese and lox, but I don't react negatively to it. I suppose this is because the bonito flakes are dried. Still has a powerful umami, smokey, delicate fish flavor, but it seems more healthier to me. The cures and enormous salt from the softer smoke-cured fish that is often seen in the USA are not making me explode like a "fish." This is significantly less expensive and will last much longer than any expensive smoked salmon. I'm eager to try it out in other contexts as well.
