Then I divided the parchment paper into little squares. I placed a piece of paper between each slice of fruit cake before placing it in a plastic freezer bag and freezing it. I may now have fruit cake whenever I want it by just removing one or two slices as needed.

I enjoy a tasty fruitcake. Having stated that, let me also emphasize how hard to find decent ones are. Most taste like they are five years old and are dry and terrible. This one not! A excellent substitute for Harry and David's exquisite but expensive fruitcake creation, this cake is moist and tasty. The Claxton ranks among the very best. The three packages in the box weigh a lot—three pounds—and they are really neatly put together. I put two of the packages in the freezer and partially sliced one into very thin slices, which I ate this morning with some Blue Mountain coffee—they were delicious!

The fruit cake was a gift for my father-in-law, who resides in an assisted care facility.I took the tin box out of the cardboard shipping box when the fruitcake got to my house so I could wrap it up for him for Christmas. I thought it would be a good idea to check the contents of the container, so I lifted the cover to take a peek at the fruitcake just before I set it on my counter to be wrapped. I gave in to the amazing and delicious perfume that overcame me and mixed with my olfactory receptors as I stood there, staring down at this magnificent creature lying helplessly before me. OK, a few I'm one of those nuts who truly enjoys fruitcake, especially when it still has green citron. Try to find that nowadays. I've tried all kinds of brands, from Jesuit's to Monks, from England to New England, and none have been particularly satisfying, bland, dry, or just plain blah. When you held the cake up to the light, the fruit pieces appeared to be stained glass windows. The cake was quite dense.
