In addition to being more flavorful and fresher, the Roland anchovies also appear to have less bones and, in my opinion, are not as salty.I use anchovies to flavor salads while adhering to a strict diet. On a strict diet, anchovies in olive oil? YES! 6 fillets, 25 calories, and 4 grams of protein make up a portion. I only use half of that amount.After opening, I advise moving the fillets from the can to an airtight glass jar with a large mouth (a clamp type makes things incredibly easy). The amount of olive oil in each can is just right to adequately fill such jars. Yes, cooling down the oil clouds and hardens it, but removing it from the cold for a little while restores the oil to its original consistency.

I rate this as five stars. I have no idea if these canned anchovies are good or not because I don't really know any other brands. They were the most reasonably priced, so I got them to use in Salade Nicoise.I expected the fish would have soft meat because it was wrapped in oil. As fillets, I also expected that they would be boneless. Both of these are false. The texture of the anchovies is best compared to jerky or leather strips. They are all stuffed to the gills with hair. You must prepare ahead of time to let the can to get to room temperature so you can fish the fish out because the oil they are packed in becomes opaque and hardened in the refrigerator.I was pleasantly surprised by how mildly salty and fishy they don't actually taste, only adding the accent that was, in my opinion, necessary.Before using them, I rinse them and give them a brief soak in water, so perhaps that lessened any harsh flavors. Your results may differ.

Far superior to the store brands of boney, excessively salty tinned anchovies from Morocco, South America, or the Far East. Though not as nice as the meaty matured Spanish types, like the Ortiz brand (but also not nearly as expensive). a good option for pasta puttanesca, canapés, and salads (typical for Caesar), as well as for creating tapenade and shellfish in the Provençal style.
