I received six packages of three ribs each, vacuum-packed. Each bundle weighed a little bit more than one pound. Very little fat or gristle was wasted, and the flavor was superb. I put five of the packs in the freezer and used one for split pea soup. I believe that it would be feasible to overcook them because they have so little fat and gristle. I'm used to inspecting the meat after three hours of cooking the pea soup. After two hours, this was obviously finished.

I largely enjoy all smoked foods. Although I have long been a fan of Speck, I was a little hesitant to purchase it from Amazon. I will note that shipment was slow, the ice packs leaked, and the box was in poor condition. This didn't really worry me because the meat is completely cured and vacuum-packed in a chamber. My, oh my, what a fantastic product this is. The most recent speck I purchased from a reputable Italian website was tasty but oversmoked and rough.For those of you who are unfamiliar, Speck has skin on one side. I believe that this must be removed immediately since I am unsure of how to handle it. The skin is as resilient as, er, pigskin. I received a 5.4# item. I removed the skin and a portion of the fat cap, totaling 13 or 14 oz. That is amazing, in my opinion. The meat has a high density. It hardly contains any water. Thin slices are quite difficult to cut (my preference is less than 1/16"). Although a meat slicer would be ideal, I cut over 100 slices with a fine knife that had a very sharp edge. I vacuum-pack and store for later use around 1/2 pound packs. Use it with melon, parmesan, balsamic, or wrap it around asparagus the same way you would use prosciutto. Personally, I prefer it slightly cooked. This lessens the meat's tendency to be stringy. Like bacon is one of my favorite applications. Use it like bacon after sautéing. really good
